Brutal Winter Wonderland

So after a few days of digging my car out, clearing the driveway, pathway and sidewalk out of snow, my muscles are still a little sore.

This winter season has definitely been very brutal. It is only February and we have already accumulated approximately 60 inches of snow.

A little over a week ago, we've had about two feet of snow. This week, another two feet. Shoveling the snow has been very exhausting. Luckily, my next door neighbor has been very nice and plowed my sidewalk everytime it snowed.

Our office was closed due to the snowstorm, however I still had to work from home and make sure that my duties were completed. This is also the reason why I was not able to shovel the snow as soon as it stopped snowing. Normally, I would start shoveling the snow off of the ground because it is much lighter than a compacted snow. It gets compacted and heavier if I let it sit for a day because as the sun shines on the snow, it melts, then refreezes, becomes ice and then it gets heavier.


The trees in my my backyard are still kissing the ground due to the weight of the snow.












The snow was really thick by the time I stopped working but apparently, the snow did not stop falling down from the cloudy, gray, skies.











I did not believe my daughter when she told me that the snow were almost at the same level as the fence in our backyard.












In the morning, I was also delighted to see these icicles from my kitchen window.












And of course, the dreaded, big dig!













I knew, that I needed something to drink or eat after shoveling the snow. As a result, I decided to stick my left over vodka in the snow so that I could take a few shots after the dig.










Unfortunately, I was not able to find my vodka after the dig. It was completely buried in the snow. So, I took a shot of the left over jagermeister! Yipes!

















Over all, it was a good experience. The dig, the drink, spending time with daughter, and of course free time with the fireplace and movies! Too bad, wifey was stuck at work! :)

Dinner

I was craving for my favorite soup, Arroz caldo. It is such a perfect soup for a brutal snowy weather. Unfortunately, I was working from home and I did not have time to cook it. My wife was not also enthusiastic on the idea of cooking the soup. Besides, she had to go to work in less than an hour.


Consequently, I was able to whip up a delicious, healthy meal that my daughter and I enjoyed. I was able to gather, romaine lettuce, grilled chicken breast, hard boiled eggs and light Greek dressing.

As I was preparing the salad, my daughter smelled the aroma of chicken grilling on the stovetop grill pan. Curious, she asked what I was preparing for meal and if she could help in preparing it. Without any hesitation, I of course allowed her to help. She also stated that she was not going to eat it, but ended up eating the salad after tasting the chicken. She really enjoyed eating the salad, especially the grilled chicken.
A few hours ago before this picture was taken, she had a temperature of 101.7F. I was glad to see my little Angel back to her lively self again while enjoying the salad we both prepared.

Lunch for Today

Cobb salad with tuna, bacon, eggs, tomatoes, black olives, bleu cheese and avocado. The dressing was light ranch dressing. Yum!

The reason why I am posting this is because I started my low to no carb diet since yesterday. So far, I am doing good. I have not weighed myself yet, but I am planning to do it so I can monitor my progress and document here on my blog.

Every time someone finds out that I am on a diet, they ask me, "for what?". They tell me I don't need to go on a diet because I have nothing to lose. They say this all the time, but the reality is, I have a keg to lose on my tummy. I take it as a compliment sometimes, but i think they are just trying be nice.

So, we'll see. I hope I can maintain my diet. I know I have been successful every time I do my "low to no carb" diet." I have won the biggest loser challenge here at work, but that was with strenuous workout at the gym. This time, I am just doing minor exercise right from the "On Demand" exercise! :)
